The grapes are harvested early to maintain naturally fresh, crisp acidity and are then fermented, separately in temperature controlled stainless steel to maintain the optimum of bright fruit aromas. The base wines are then blended and bottled with a bit of yeast to age for 18 months on lees prior to disgorging. The dosage is made with the most neutral flavored liquor to allow the flavor of the original grapes to shine. Total residual sugar: 10.5 grs/liter.
"Lots of cherry pie and apple flavors show in this lively bubbly, with a light smoky underpinning and an easygoing structure. This would make a good aperitif or paring for light foods, such as prosciutto." - 84, Wine Spectator
"The N.V. Cava Brut is a blend of the traditional Cava varieties along with 5% Chardonnay. It offers up a nose of mineral, melon, and baking spices along with a steady stream of small bubbles. It has ample tasty fruit, good acidity, and a refreshing finish." - 87, Wine Advocate
"The nose delivers a light but perceptible blast of sucking candy, children’s vitamin and perfume aromas. The palate shows additional candied characteristics, but for the most part it’s fresh and easy, with a good feel." - Wine Enthusiast
"The Conde de Subirats has zesty lemon and kiwi scents and an exotic note of mustard seed on the fresh nose; possesses deep orchard and tropical fruit flavors." - 88, Stephen Tanzer's International Wine Cellar
Bright straw with a frothy mousse. Zesty lemon and kiwi scents and an exotic note of mustard seed on the fresh nose. A suave, silky bubbly that possesses deep orchard and tropical fruit flavors and a slow-building red fruit quality. This is strikingly supple, with very good finishing lift and clarity.
